Hardshell lobsters have not molted their shell yet, they are generally full of meat and much more lively lobsters since they are still in their old shell. A soft shell lobster is also called a new shell, these are lobsters that have recently molted their shell, they have a sweeter flavor, but not as full of meat and generally soft shells do not travel as well as hard shell lobsters until they begin to firm up. 



Generally when we pack lobsters to travel, we recommend 24-48 hours from when you leave our store until they need to be cooked. 

Maine has no season for lobster they can be fished for all year, however the majority of the catch start when the soft shell lobsters are in sometime between May and July and the catch stays strong usually through December and slows down into January.
